  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup apricot preserves
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the flour and salt, mixing until well combined.
  4. Press half of the dough into the bottom of a greased baking pan.
  5. Spread the apricot preserves evenly over the dough.
  6. Drop spoonfuls of the remaining dough over the preserves.
  7. Bake for 30-35 minutes or until lightly golden.
  8. Cool before cutting into bars.

Notes

  • For an extra flavor, add lemon zest to the dough.
