A delicious and easy comfort food recipe combining bacon, Brussels sprouts, butternut squash, and pasta.

  • 8 ounces pasta
  • 4 slices bacon
  • 2 cups Brussels sprouts, halved
  • 1 cup butternut squash, cubed
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook bacon over medium heat until crispy. Remove from skillet and chop.
  3. Add Brussels sprouts and butternut squash to the skillet and sauté in bacon fat until tender.
  4. Combine pasta, bacon, and vegetables in a large bowl. Drizzle with olive oil, salt, and pepper. Mix well.
  5. Serve with grated Parmesan cheese on top.
