- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup crushed pistachios
- 1 teaspoon cinnamon
- 1 cup honey
- 1/2 cup water
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs, one at a time, mixing well after each addition.
- Fold in crushed pistachios and cinnamon.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 50-60 minutes, until the edges are set but the center is slightly jiggly.
- While the cheesecake bakes, combine honey and water in a saucepan and bring to a boil. Simmer for 10 minutes, then let cool.
- Once baked, let the cheesecake cool and drizzle with honey syrup before serving.
