1 cup all-purpose flour
1/4 cup unsalted butter
2 tablespoons granulated sugar
1/4 teaspoon salt
1/4 cup cold water
2 cups mixed berries
1 cup milk
3 large egg yolks
1/4 cup cornstarch
1/2 cup granulated sugar
1 teaspoon vanilla extract
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix flour, sugar, and salt. Cut in butter until crumbly.
Add cold water and mix until a dough forms. Roll out and press into tart pans.
Blind bake the pastry shells for 15 minutes.
In a saucepan, heat milk. In another bowl, whisk egg yolks, cornstarch, and sugar.
Combine the mixtures, stir constantly on low heat until thickened.
Remove from heat and stir in vanilla extract.
Fill the baked pastry shells with custard and top with mixed berries.
Chill in the refrigerator for at least an hour before serving.
Notes
For a sweeter pastry, you can add additional sugar to the pastry dough.
