2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 cup granulated sugar
4 large eggs
4 (8 ounce) packages cream cheese, softened
1 teaspoon vanilla extract
1 cup sour cream
Instructions
Preheat your oven to 325°F (160°C).
In a bowl, mix graham cracker crumbs with melted butter and 1/4 cup of sugar. Press into the bottom of a springform pan.
In another bowl, beat the cream cheese until smooth. Gradually add the rest of the sugar, then add eggs one at a time, mixing well after each addition.
Stir in vanilla extract and sour cream until combined.
Pour cream cheese mixture over the crust in the springform pan.
Bake for 1 hour, or until the center is set. Turn off the oven and leave the cheesecake inside for another hour.
Remove from oven and let cool, then refrigerate for at least 4 hours before serving.
