Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and 1/4 cup of sugar. Press into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese until smooth. Gradually add the rest of the sugar, then add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract and sour cream until combined.
  5. Pour cream cheese mixture over the crust in the springform pan.
  6. Bake for 1 hour, or until the center is set. Turn off the oven and leave the cheesecake inside for another hour.
  7. Remove from oven and let cool, then refrigerate for at least 4 hours before serving.
