- 2 pounds boneless, skinless chicken breasts
- 1 cup Riesling wine
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 cups broccoli florets
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1/2 cup grated Parmesan cheese
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until soft.
- Add the chicken breasts and cook until browned on both sides.
- Stir in the mushrooms and cook until they are softened.
- Pour in the Riesling wine, bring to a simmer, and cook for 5 minutes.
- Add the heavy cream, broccoli, salt, black pepper, and thyme. Cook until the broccoli is tender.
- Stir in the Parmesan cheese and mix well. Serve hot.
