  • 2 cups assorted vegetables (like zucchini, bell peppers, and spinach)
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 8 large lasagna noodles
  • 1 jar marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, mix the assorted vegetables, mozzarella cheese, ricotta cheese, Italian seasoning, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a lasagna noodle on a flat surface, add a portion of the vegetable mixture, and roll it up.
  6. Arrange the rolls in the baking dish seam-side down, then top with remaining marinara sauce and sprinkle with parmesan cheese.
  7. Bake for 25-30 minutes until bubbly and golden.
