  • 1 cup cherries, pitted and chopped
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/4 cup amaretto liqueur
  • 2 cups ladyfinger cookies
  • 1 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder for dusting

Instructions

  1. In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract. Beat until stiff peaks form.
  2. In a separate bowl, mix coffee and amaretto.
  3. Dip ladyfingers quickly in the coffee mixture and layer them in a serving dish.
  4. Spread a layer of the mascarpone mixture over the ladyfingers.
  5. Add a layer of chopped cherries.
  6. Repeat the layers until ingredients are used up, finishing with the mascarpone mixture on top.
  7. Refrigerate for at least 4 hours, or overnight, to set.
  8. Dust with cocoa powder before serving.
