1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 teaspoons almond extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cherry jam
1/2 cup slivered almonds
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs and almond extract, mixing until combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Take a tablespoon of dough and flatten it; add a teaspoon of cherry jam and some slivered almonds in the center, then fold the dough over to encase the filling.
Place the filled dough balls onto a baking sheet lined with parchment paper.
Bake for 12-15 minutes or until the edges are lightly golden brown.
Let them cool on a wire rack before serving.
Notes
For a richer flavor, you can add a touch of vanilla extract.
These cookies can be decorated with icing if desired.
