Cherry Bakewell Frangipane Stuffed Cookies

A delicious treat combining the flavors of cherry and almond in a delightful cookie form.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cherry jam
  • 1/2 cup slivered almonds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs and almond extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Take a tablespoon of dough and flatten it; add a teaspoon of cherry jam and some slivered almonds in the center, then fold the dough over to encase the filling.
  7. Place the filled dough balls onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the edges are lightly golden brown.
  9. Let them cool on a wire rack before serving.

Notes

  • For a richer flavor, you can add a touch of vanilla extract.
  • These cookies can be decorated with icing if desired.
