A creamy and spicy Chicken Poblano Soup perfect for warm dinners.

Ingredients

  • 1 pound chicken breasts
  • 2 poblanos, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup corn
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion and garlic until fragrant.
  2. Add the chopped poblanos and cook until soft.
  3. Stir in cumin and chili powder.
  4. Add chicken breasts and chicken broth; bring to a boil.
  5. Reduce heat and simmer until chicken is cooked through.
  6. Remove chicken, shred it, and return it to the pot.
  7. Stir in heavy cream and corn; heat through.
  8. Season with salt and pepper.
  9. Serve hot, garnishing with cilantro.

Notes

  • This soup can be served with tortilla chips.
