A rich and creamy chocolate strawberry swirl cheesecake that is easy to make at home and perfect for any occasion.

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh strawberries, pureed
  • ½ cup sour cream
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine chocolate cookie crumbs and melted butter until well mixed. Press the mixture into the bottom of a springform pan.
  3. In another bowl, beat cream cheese until smooth, then add sugar and vanilla. Mix well.
  4. Beat in the eggs, one at a time, until just combined. Do not overmix.
  5. Add the sour cream and heavy cream, then mix until smooth.
  6. Pour half of the cheesecake batter over the crust, then swirl in the pureed strawberries. Top with the remaining batter and swirl once more.
  7. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool inside for 1 hour.
  9. Refrigerate for at least 4 hours before serving.

Notes

  • For a firmer cheesecake, refrigerate overnight.
  • Garnish with fresh strawberries before serving.
