- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup fresh strawberries, pureed
- ½ cup sour cream
- ½ cup heavy cream
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine chocolate cookie crumbs and melted butter until well mixed. Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth, then add sugar and vanilla. Mix well.
- Beat in the eggs, one at a time, until just combined. Do not overmix.
- Add the sour cream and heavy cream, then mix until smooth.
- Pour half of the cheesecake batter over the crust, then swirl in the pureed strawberries. Top with the remaining batter and swirl once more.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours before serving.

- For a firmer cheesecake, refrigerate overnight.
- Garnish with fresh strawberries before serving.
