  • 1 large egg
  • 2 cups all-purpose flour
  • 2 tablespoons instant coffee granules
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix well.
  4. In another bowl, whisk together the flour, instant coffee, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

  • For a stronger coffee flavor, you can increase the amount of instant coffee granules.
