  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon coffee extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the crushed graham crackers and melted butter until combined. Press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the sour cream, cooled coffee, vanilla extract, and coffee extract until fully incorporated.
  5. Pour the cheesecake batter over the crust in the springform pan.
  6. Bake for 50-60 minutes or until the center is set. Allow to cool, then refrigerate for at least 4 hours before serving.
