A delightful twist on classic French onion soup transformed into a comforting chicken dish.

  • 4 chicken breasts
  • 6 strips turkey bacon
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup Swiss cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, add olive oil and sauté onions until caramelized.
  4. Add minced garlic and thyme, cooking for another minute.
  5. Season chicken breasts with salt and pepper, then brown on both sides in the skillet.
  6. Place chicken in a baking dish, top with sautéed onions, bacon, and pour beef broth over.
  7. Cover with Swiss cheese and bake for 25-30 minutes.
  8. Serve hot, garnished with additional thyme if desired.
