Ingredients

  • 3 pounds chuck roast
  • 1 cup sliced turkey bacon
  • 2 cups onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  3. In the same skillet, sear the pot roast on all sides until browned. Remove and place in a roasting pan.
  4. Add the onions and garlic to the skillet and sauté until soft.
  5. Pour the broth and Worcestershire sauce over the roast, then add the bacon and herbs.
  6. Cover and roast in the oven for 3-4 hours, or until tender.
  7. Let rest before slicing and serving.

  • For extra flavor, use homemade beef broth.
