Ingredients

  • 1 cup quinoa
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon nutritional yeast (optional)

Instructions

  1. Rinse the quinoa under cold water.
  2. In a large pot, heat the olive oil over medium heat and sauté the garlic until fragrant.
  3. Add the broccoli and sauté for another 2 minutes.
  4. Stir in the quinoa, vegetable broth, coconut milk, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer, cover, and cook for 15-20 minutes until the quinoa is fluffy and broccoli is tender.
  6. If using, stir in nutritional yeast before serving.
