  • 1 ½ cups chocolate graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 4 large eggs
  • 1 cup dark chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix together the chocolate graham cracker crumbs and melted butter.
  3. Press the crust mixture into the bottom of a springform pan.
  4. In a large bowl, beat the softened cream cheese and sugar until smooth.
  5. Mix in the sour cream, then add the eggs one at a time, blending well after each addition.
  6. Stir in melted dark chocolate until fully combined.
  7. Gently fold in the fresh raspberries.
  8. Pour the cheesecake mixture over the crust in the springform pan.
  9. Bake for 45-50 minutes until the center is set but slightly jiggly.
  10. Let cool, then chill in the refrigerator for at least 4 hours before serving.
