1/2 cup honey
1/4 cup rice vinegar
4 cloves garlic, minced
1 tablespoon ginger, grated
1 tablespoon sesame oil
1 teaspoon black pepper
1 bunch green onions, chopped
Instructions
In a large bowl, combine soy sauce, honey, rice vinegar, garlic, ginger, sesame oil, and black pepper to create the marinade.
Place the chuck roast in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours, preferably overnight.
Preheat your oven to 300°F (150°C).
Remove the roast from the marinade and place it in a roasting pan. Reserve the marinade.
Cover the pan with foil and roast for 3 hours.
After 3 hours, remove the foil, baste the roast with the reserved marinade, and continue roasting for another hour until the meat is tender.
Let the roast rest for 10 minutes before slicing.
Garnish with chopped green onions before serving.
Notes
For a sweeter flavor, add more honey to the marinade.
This dish pairs well with steamed rice or noodles.
