A flavorful and easy-to-make chicken enchiladas recipe that will satisfy your cravings.

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the shredded chicken with half of the enchilada sauce and half of the cheese.
  3. In each tortilla, place some of the chicken mixture and roll it up.
  4. Place the rolled tortillas in a baking dish, seam side down.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
  6. Bake for 20-25 minutes until the cheese is bubbly.
  7. Serve hot with sour cream and chopped cilantro on top.

Notes

  • For a spicier flavor, add jalapeños to the chicken mixture.
  • Feel free to use rotisserie chicken for convenience.
