  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 8 small corn tortillas
  • 1 cup chopped cilantro
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1 cup crumbled queso fresco

Instructions

  1. In a bowl, mix the olive oil and spices to create a marinade.
  2. Add the chicken to the bowl and coat well with the marinade.
  3. Grill the chicken over medium heat until cooked through, about 6-7 minutes per side.
