  • 1 pound potatoes
  • 2 cups diced apples
  • 1 pound carrots
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 4 cups vegetable broth
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions and garlic, sauté until translucent.
  3. Stir in the diced apples, potatoes, and carrots.
  4. Pour in apple cider and vegetable broth.
  5. Add cinnamon and nutmeg, stir well.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Using a masher, partially mash the stew for a thicker consistency.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!
