A comforting dish that combines the rich flavors of French onion soup with chicken and orzo pasta, elevated by the addition of turkey bacon.

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 6 slices turkey bacon, chopped
  • 1 large onion, thinly sliced
  • 2 cups shredded Swiss cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the turkey bacon until crispy and set aside.
  3. Add onions to the same skillet and cook until caramelized.
  4. In a large mixing bowl, combine orzo, chicken broth, cooked chicken, garlic powder, thyme, and season with salt and pepper.
  5. Stir in the caramelized onions and turkey bacon.
  6. Transfer the mixture to a greased casserole dish and top with Swiss cheese.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.

Notes

  • For extra flavor, add some freshly chopped parsley on top before serving.
  • Feel free to substitute any cooked chicken with rotisserie chicken for an easier option.
