  • 200g pitted dates
  • 250ml boiling water
  • 1 teaspoon baking soda
  • 85g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 180g all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. In a bowl, combine the pitted dates and boiling water. Stir in the baking soda and allow to cool slightly.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the flour, vanilla extract, baking powder, and salt, then incorporate the date mixture.
  6. Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a skewer comes out clean.
  7. While baking, prepare the toffee sauce by heating butter, brown sugar, and cream in a saucepan until bubbly.
  8. Once the pudding is done, pour the sauce over it and serve warm.
