  • 1 pound boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix olive oil, oregano, garlic powder, salt, and black pepper.
  3. Coat the chicken breasts with the marinade and place them on a baking sheet.
  4. Bake the chicken for 25-30 minutes or until cooked through.
  5. While the chicken is baking, prepare the quinoa according to package instructions.
  6. Once the chicken is done, let it rest for a few minutes before slicing.
