1 cup honey
1 pound pistachios, chopped
4 cups cream cheese, softened
1 cup sugar
4 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup butter, melted
1 package phyllo dough
1/2 cup water
1/2 cup granulated sugar
1 teaspoon lemon juice
Instructions
Preheat the oven to 350°F (175°C).
In a saucepan, combine honey, water, and sugar, then bring to a boil for 10 minutes. Stir in lemon juice and set aside.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
Stir in vanilla extract and ground cinnamon.
Layer phyllo dough in a greased pan, brushing each layer with melted butter.
Spread the cream cheese mixture over the phyllo layers and top with chopped pistachios.
Cover with more phyllo layers, brushing each with melted butter.
Bake for 45-50 minutes until golden brown.
Pour the honey syrup over the cheesecake while still warm.
Allow to cool before serving.
