  • 1 cup cherries, pitted and halved
  • 1/2 cup Amaretto liqueur
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 12 ladyfinger cookies

Instructions

  1. In a bowl, mix the pitted cherries with Amaretto. Allow to soak for 15 minutes.
  2. In another bowl, whip the heavy cream until soft peaks form. Gradually add sugar and vanilla, continuing to whip until firm peaks form.
  3. Gently fold the mascarpone cheese into the whipped cream until well combined.
  4. Dip each ladyfinger briefly into the cherry-Amaretto mixture and layer them in a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers and repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  6. Chill for at least 4 hours or overnight before serving.

Notes

  • For a richer flavor, consider adding chocolate shavings on top before serving.
  • Adjust the amount of Amaretto according to your preference.
