Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 8 oz dark chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix chocolate cookie crumbs and melted butter together.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add sugar and vanilla extract; mix until combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Mix in sour cream and melted chocolate until smooth.
  8. Gently fold in fresh raspberries.
  9. Pour the cheesecake batter over the crust in the pan.
  10. Bake for 55-60 minutes or until the center is set.
  11. Allow to cool before refrigerating for at least 4 hours.
  12. Serve chilled, garnished with extra raspberries if desired.

Notes

  • For best results, let the cheesecake sit overnight before serving.
