2 pounds beef chuck, cut into 1-inch cubes
4 ounces turkey bacon, diced
1 cup carrots, sliced
1 cup pearl onions, peeled
2 cups mushrooms, quartered
3 cups red wine
2 cups beef broth
3 cloves garlic, minced
2 tablespoons tomato paste
2 tablespoons all-purpose flour
1 teaspoon thyme
2 bay leaves
Salt and pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a large pot, sauté the turkey bacon until crispy. Remove and set aside.
In the same pot, brown the beef cubes in the bacon fat.
Add the onions, carrots, and mushrooms to the pot and cook until slightly softened.
Stir in the garlic, tomato paste, and flour; cook for 1-2 minutes.
Pour in the red wine and beef broth, then add the thyme, bay leaves, and browned turkey bacon.
Bring to a simmer, cover, and transfer to the oven.
Bake for 2 to 2.5 hours, until the beef is tender.
