2 medium sweet potatoes
2 cups butternut squash, cubed
3 large carrots, grated
9 lasagna noodles
2 cups ricotta cheese
2 cups mozzarella cheese, shredded
1 cup Parmesan cheese, grated
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil and sauté garlic until fragrant.
Add sweet potatoes, butternut squash, and carrots. Cook until slightly softened.
In a baking dish, spread a layer of the vegetable mixture, followed by a layer of ricotta, a layer of noodles, and a layer of mozzarella. Repeat until all ingredients are used, finishing with mozzarella and Parmesan on top.
Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until golden and bubbly.
Let it cool slightly before serving.
Notes
For a gluten-free option, use gluten-free lasagna noodles.
