A comforting and delicious layered lasagna featuring sweet potatoes, butternut squash, and carrots.

  • 2 cups mashed sweet potatoes
  • 2 cups pureed butternut squash
  • 1 cup grated carrots
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the mashed sweet potatoes, pureed butternut squash, grated carrots, and ricotta cheese. Season with salt and pepper.
  3. Spread a thin layer of the vegetable mixture on the bottom of a baking dish.
  4. Layer 3 lasagna noodles over the vegetable mixture.
  5. Repeat the layering process until all ingredients are used, finishing with a layer of noodles on top.
  6. Sprinkle shredded mozzarella cheese over the top layer.
  7. Drizzle with olive oil.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Notes

  • Allow to cool for 10 minutes before slicing to serve.
  • Can be prepared ahead of time and refrigerated before baking.
