Using leftover pasta, these fritters are an easy and delicious way to re-purpose last night’s meal.

Ingredients

  • 2 cups leftover pasta
  • 1/2 cup grated cheese
  • 1/4 cup chopped green onions
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Oil for frying

Instructions

  1. In a large bowl, mix the leftover pasta, grated cheese, and chopped green onions.
  2. In a separate bowl, beat the eggs and then combine them with the pasta mixture.
  3. Add flour, salt, pepper, and garlic powder, stirring until well mixed.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the hot oil, flattening slightly.
  6. Fry until golden brown, about 3-4 minutes per side.
  7. Remove from the pan and drain on paper towels.
