  • 2 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup cooked taco seasoned ground beef
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon taco seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and pierce them with a fork. Rub with olive oil and sprinkle with salt, then wrap in aluminum foil.
  3. Bake the potatoes for 45-60 minutes, until tender.
  4. Once cooked, let the potatoes cool slightly, then cut them open and fluff the insides with a fork.
  5. Layer the taco seasoned ground beef, cheese, sour cream, diced tomatoes, green onions, and cilantro over the fluffed potato.
  6. Sprinkle with additional taco seasoning if desired and serve warm.
