Indulge in a loaded potato taco bowl that combines the richness of turkey bacon with the comforting flavors of potatoes.

  • 4 large potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 avocado, diced
  • 1/4 cup green onions, chopped
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes, then bake for 45 minutes or until tender.
  3. While potatoes are baking, cook the turkey bacon in a skillet until crispy. Remove and chop.
  4. Once potatoes are cooked, let them cool slightly before cutting in half and scooping out some flesh.
  5. Mix the scooped potato with cheese, sour cream, chopped bacon, paprika, salt, and pepper.
  6. Fill the potato halves with the mixture, then return to the oven for an additional 15 minutes.
  7. Top with diced avocado and chopped green onions before serving.
