A delicious and comforting Mexican Street Corn Soup featuring a turkey bacon twist.

Ingredients

  • 4 cups corn kernels
  • 1 cup diced turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook the diced turkey bacon until crispy.
  2. Add the onion and cook until translucent.
  3. Stir in the garlic and cook for another minute.
  4. Add the corn kernels, chicken broth, chili powder, and cumin. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in the heavy cream and lime juice.
  7. Season with salt and pepper to taste.
  8. Serve garnished with fresh cilantro.

Notes

  • For a spicier version, add diced jalapeños.
  • Can use frozen corn if fresh is not available.
