1 ½ cups graham cracker crumbs
½ cup unsweetened cocoa powder
1/2 cup sugar
1/3 cup melted butter
3 cream cheese packages (8 oz each)
1 cup sour cream
1 cup heavy cream
1 teaspoon vanilla extract
1 cup sugar
4 large eggs
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
In a separate bowl, beat the cream cheese until smooth, then mix in sour cream, heavy cream, and vanilla extract.
Gradually add the sugar and mix well.
Add the eggs one at a time, mixing well after each addition.
Pour the cream cheese mixture over the crust in the springform pan.
Bake for 50-60 minutes or until the center is set but still slightly jiggly.
Turn off the oven and let the cheesecake cool for an hour in the oven with the door ajar.
Chill in the refrigerator for at least 4 hours before serving.
