  • 4 cups chicken broth
  • 1 cup cooked, shredded chicken

  • 1 cup heavy cream
  • 1 teaspoon thyme
  • salt and pepper to taste
  • 2 cups baby spinach

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, carrots, and celery; cook until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken and gnocchi; cook until gnocchi is tender.
  5. Stir in heavy cream, thyme, salt, and pepper.
  6. Add spinach and cook until wilted.
