Deliciously crispy and cheesy, these Parmesan Roasted Potatoes are the perfect side dish for any meal.

  • 2 pounds baby potatoes
  • 1 cup grated Parmesan cheese
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried rosemary

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the baby potatoes in half.
  3. In a large bowl, mix the olive oil, garlic powder, salt, black pepper, and dried rosemary.
  4. Add the potatoes to the bowl and toss until coated.
  5. Spread the potatoes on a baking sheet in a single layer.
  6. Bake for 25-30 minutes until crispy.
  7. Remove from the oven and sprinkle with grated Parmesan cheese.
  8. Bake for an additional 5 minutes to melt the cheese.

Notes

  • For extra crispiness, broil for the last 2 minutes.
