A deliciously layered cake featuring the rich flavor of pistachio paired with creamy mascarpone.

  • 1 cup pistachio nuts
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1 1/2 cups granulated sugar
  • 5 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mascarpone cheese
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a food processor, blend the pistachio nuts until finely ground.
  3. In a bowl, combine flour, baking powder, and salt.
  4. In another bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Gradually add the dry ingredients and ground pistachios to the butter mixture, mixing until just combined.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool.
  9. In a separate bowl, whip the heavy cream until stiff peaks form, then fold in the mascarpone cheese.
  10. Assemble the cake by layering the cooled cakes with the mascarpone cream in between.
  11. Frost the top and sides of the cake with the remaining mascarpone cream.

Notes

  • Ensure the pistachios are unsalted for the best flavor.
  • For extra decoration, you can use crushed pistachios on top.
