  • 2 fillets salmon
  • 1 cup pomegranate juice
  • 1/2 cup orange juice
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small saucepan, combine pomegranate juice, orange juice, honey, soy sauce, and ginger. Bring to a boil, then reduce heat and simmer until slightly thickened.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Season salmon with salt and pepper.
  4. Place salmon skin-side down in the skillet and sear for about 4 minutes.
  5. Carefully flip the salmon, then pour the glaze over it.
  6. Transfer the skillet to the oven and bake for 8-10 minutes, or until the salmon is cooked through.
  7. Serve the salmon drizzled with the remaining glaze.
