  • 1 cup oat flour
  • 1/2 cup protein powder
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the bananas until smooth.
  3. Add in the honey, applesauce, and eggs, mixing until well combined.
  4. In another bowl, whisk together the oat flour, protein powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.
