A delicious and healthy take on traditional chicken enchiladas packed with protein.

Ingredients

  • 2 cups shredded chicken
  • 1 cup black beans
  • 1 cup corn
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 whole wheat tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix shredded chicken, black beans, corn, and half of the enchilada sauce.
  3. Warm the tortillas in a skillet for a few seconds on each side.
  4. Spoon the chicken mixture into each tortilla, roll them up, and place in a baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with cheese.
  6. Bake for 20 minutes until heated through and cheese is bubbly.

Notes

  • For extra flavor, add diced bell peppers or jalapeños to the filling.
  • Serve with sour cream or guacamole on the side.
