Delicious pumpkin and mushroom spaghetti made easy with turkey bacon for a comforting meal.

Ingredients

  • 8 ounces spaghetti
  • 1 cup pumpkin puree
  • 1 cup sliced mushrooms
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook spaghetti according to package instructions.
  2. In a large skillet, cook turkey bacon until crispy. Remove and chop.
  3. Add olive oil, garlic, and mushrooms to the skillet, and sauté until soft.
  4. Stir in pumpkin puree and thyme, and season with salt and pepper.
  5. Add cooked spaghetti to the sauce and toss to combine.
  6. Serve topped with chopped turkey bacon and Parmesan cheese.

Notes

  • For a vegetarian option, omit turkey bacon.
