  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon cocoa powder
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to create a crust.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add the sugar and vanilla extract, continuing to mix.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the red food coloring and cocoa powder until well combined.
  6. Fold in the sour cream until the mixture is smooth.
  7. Pour the cheesecake batter over the crust in the springform pan.
  8. Bake for 1 hour or until the center is set.
  9. Remove from oven and let it cool completely before refrigerating for at least 4 hours or overnight.
