  • 2 roasted beets, peeled and diced
  • 4 slices turkey bacon, cooked and crumbled
  • 4 cups mixed greens
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 3 tablespoons balsamic vinaigrette

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the beets in foil and roast for 45-60 minutes until tender.
  3. Once cooked, let the beets cool, then peel and dice them.
  4. In a large bowl, combine the mixed greens, roasted beets, crumbled turkey bacon, goat cheese, and walnuts.
