Ingredients

  • 3 medium beets
  • 4 slices turkey bacon
  • 4 cups mixed greens
  • 1/4 cup feta cheese
  • 1/4 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the beets in foil and roast for about 45 minutes or until tender.
  3. Meanwhile, cook the turkey bacon in a skillet until crispy, then crumble it into pieces.
  4. Once the beets are roasted, let them cool, then peel and slice.
