  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes and cut them in half.
  3. Toss the potatoes with olive oil, garlic powder, salt, and pepper.
  4. Spread the potatoes on a baking sheet and roast for about 25-30 minutes until golden brown and tender.
  5. While the potatoes are roasting, cook the turkey bacon in a skillet over medium heat until crispy. Remove and crumble.
  6. In a large bowl, combine apple cider vinegar, Dijon mustard, and additional salt and pepper to taste.
  7. Add the roasted potatoes and crumbled bacon to the bowl and mix gently.
  8. Garnish with fresh parsley before serving.
