- 2 pounds baby potatoes
- 4 slices turkey bacon
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- 2 tablespoons fresh parsley, chopped
