  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half, then place them on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper, and toss to coat.
  4. Bake for 25-30 minutes until golden and tender.
  5. While potatoes are baking, cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
  6. In a large bowl, combine the mayonnaise, Dijon mustard, green onions, and parsley.
  7. Once the potatoes are done, let them cool slightly before adding to the bowl with the dressing.
  8. Add the bacon, and toss everything together gently until well coated.
  9. Chill in the refrigerator for at least 30 minutes before serving.
