  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1/2 cup chopped green onions
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. Place the potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  4. Roast for 25-30 minutes until tender.
  5. In a skillet, cook the turkey bacon until crispy, then chop it.
  6. In a large bowl, mix the roasted potatoes, diced chicken ham, green onions, mayonnaise, Dijon mustard, and apple cider vinegar.
  7. Add the chopped turkey bacon and toss everything together.
