- 2 pounds baby potatoes
- 4 slices turkey bacon
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- Toss the potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
- Spread the potatoes on a baking sheet and roast for 25-30 minutes, until golden brown and fork-tender.
- While the potatoes roast, cook the turkey bacon in a skillet until crispy. Remove and crumble it into pieces.
- In a bowl, whisk together Dijon mustard and apple cider vinegar.
- Once the potatoes are done, combine them in a large bowl with the mustard dressing, crumbled turkey bacon, and chopped parsley. Toss to combine.
