  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. Toss the potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
  4. Spread the potatoes on a baking sheet and roast for 25-30 minutes, until golden brown and fork-tender.
  5. While the potatoes roast, cook the turkey bacon in a skillet until crispy. Remove and crumble it into pieces.
  6. In a bowl, whisk together Dijon mustard and apple cider vinegar.
  7. Once the potatoes are done, combine them in a large bowl with the mustard dressing, crumbled turkey bacon, and chopped parsley. Toss to combine.
  8. Serve warm or at room temperature.
