  • 2 pounds pork belly, cut into cubes
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon onion, finely chopped
  • 1 tablespoon pepper, crushed
  • 1/4 cup calamansi juice or lime juice

Instructions

  1. In a bowl, combine soy sauce, vinegar, brown sugar, garlic, onion, pepper, and calamansi juice. Mix well.
  2. Add the pork cubes to the marinade and let it sit for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated pork onto skewers.
  5. Grill the skewers for about 10-15 minutes, basting occasionally with leftover marinade, until cooked through and slightly charred.
