- 2 pounds pork belly, cut into cubes
- 1/2 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup brown sugar
- 1 tablespoon garlic, minced
- 1 tablespoon onion, finely chopped
- 1 tablespoon pepper, crushed
- 1/4 cup calamansi juice or lime juice
- In a bowl, combine soy sauce, vinegar, brown sugar, garlic, onion, pepper, and calamansi juice. Mix well.
- Add the pork cubes to the marinade and let it sit for at least 2 hours, preferably overnight.
